A full venue takeover for weddings, brand launches, milestone birthdays and once-in-a-lifetime nights.
This includes both floors, the Dybka Room, Ferrari Martini Lounge, Crystal Lounge, Adey Wine Cellar and our beloved colonnade.
You get the run of the place. We bring the crew, the flavour and the theatre.

The Adey Private Wine Cellar

 

They broke through sandstone to build a cellar. Then just… kept going.

This heritage rich, column lined room is where legends are toasted, partnerships formed and unforgettable nights unfold.
With its own bar, soft lighting and acoustics that make every toast sound Oscar worthy, the Cellar is where the grown ups come to play.

Best paired with: foie gras, shared laughter and a very good reason to celebrate.

The Ferrari Martini Lounge

 

Where charm gets dressed up and manners loosen their tie.

Tucked in front of the main dining room, this colonnaded space buzzes with energy and just the right amount of flirtation.
Perfect for long table birthdays, elegant send offs and “we’re not calling it a launch but it kind of is” dinners.

Best paired with: chef’s martinis, scallop crudo and your most outrageous friend.

The Dybka Room

 

Darling Glebe’s best kept secret.

Named for Australian glass artist Anne Dybka OAM, this intimate dining room is etched into the walls like a hidden jewel.
Surrounded by heritage brick, velvet and a little old world magic, it’s perfect for quiet proposals, milestone dinners, or plotting your next delicious move.

Best paired with: caviar service, aged Burgundy and no interruptions.

The Chef’s Table

 

Darling Glebe’s most coveted seat. Part stage, part sanctuary.

Tucked beside the kitchen and nestled by the colonnade, it’s the perfect blend of discretion and drama. A front row view of the action, without ever leaving your glass unattended.

On quieter nights, it transforms into the stage for Chef Jeff Schroeter’s French Omakase:
No menu. No rules. Just instinct.

On Fridays and Saturdays, it’s available for à la carte, table d’hôte, or chef designed degustations. All served with signature flair.

Best paired with: oysters Rockefeller, sabayon (that’s a silky French custard, darling) and a knowing glance.

Menus

 

Menus change with the season, and sometimes with the mood.

We write our menus the same way we build our rooms, with heart, history and heat. You can request a custom menu, a set menu, or leave it entirely up to Jeff. (We recommend that last one.) Want to start with martinis and end with chocolate fondant? We’ve done stranger.
