The Dybka Private Dining Room

Where light is etched and secrets stay sealed. Some rooms are styled. This one was engraved.

Tucked off the colonnade, The Dybka Room is Darling Glebe’s most intimate space. A softly lit dining chamber of heritage brick, touched with velvet and made for whispered toasts, inner circles and the kind of conversations that shape futures.

Its name honours Anne Dybka OAM, one of Australia’s most celebrated glass engravers, who once worked with Lalique, Baccarat and Orrefors.

On one wall, a round window etched with pheasant feathers, a hunter’s rifle and a bowler hat. On the other, a gothic arch alive with a school of swirling fish.

Dybka carved each detail using dental tools. A fitting tribute to the room’s first patron: resident dentist Dr. Alfred Adey, who commissioned the work in trade.

Now, it’s yours.

The Vibe

It’s discreet, quietly powerful and deeply beautiful.

Lined in velvet and steeped in quiet elegance, The Dybka Room holds a kind of hush.

Not silent, just focused. Private. Charged. The light here is low and flattering.

The table, hand crafted from a single 13-metre coachwood tree, glows like something sacred.

This is where deals are inked. Proposals whispered.

Birthdays toasted with your closest five (or slightly chaotic seven).

Food & Wine

Everything is bespoke. Nothing is rushed.

The room may be small, but the service is nothing short of grand. Whether you're starting with caviar or ending with crème brûlée, let Chef Jeff design a menu that takes you somewhere unexpected.

Our sommelier can match the moment and maybe introduce you to a bottle you'll never forget.

Choose à la carte, a chef designed degustation, or a three course table d’hôte with matching wines from our 2,800 bottle cellar-in-progress.
