The Dybka Private Dining Room

Tucked off the colonnade, The Dybka Room is Darling Glebe’s most intimate space. A softly lit dining chamber of heritage brick, touched with velvet and made for whispered toasts, inner circles and the kind of conversations that shape futures.
Its name honours Anne Dybka OAM, one of Australia’s most celebrated glass engravers, who once worked with Lalique, Baccarat and Orrefors.
On one wall, a round window etched with pheasant feathers, a hunter’s rifle and a bowler hat. On the other, a gothic arch alive with a school of swirling fish.
Dybka carved each detail using dental tools. A fitting tribute to the room’s first patron: resident dentist Dr. Alfred Adey, who commissioned the work in trade.

The Vibe

Lined in velvet and steeped in quiet elegance, The Dybka Room holds a kind of hush.

The table, hand crafted from a single 13-metre coachwood tree, glows like something sacred.
