One mission: make it unforgettable.
The Dybka Room is a jewel box of a room, quietly luminous. Two etched glass panels by Anne Dybka OAM give it its name. Look closely to see one holds koi fish mid swim, the other an abstract seasonal etching. It’s where the light is flattering, the glassware sparkles and the stories never quite stay on script.
The Chef’s Table is Darling Glebe’s best-kept invitation. Framed by colonnades and soft shadows, it’s where four seats become a world of their own. Here, the dishes are closer, the laughter carries and Chef Jeff’s touch is in every course. Enjoy the quiet thrill of knowing you're in the best seat in the house.

Jeff Schroeter
Jeff Schroeter is one of Australia’s quiet masters.
Four decades on the pans, still cooking with heart, humour and zero ego. A working legend.
Raised in Walla Walla and trained in London, New York, and Switzerland, he’s shaped Sydney’s palate through craft, not fame.
He’s cooked for royalty at The Savoy, fashion icons at The Royalton, and built cult favourites like Bistro Moncur, Bayswater Brasserie and Beckett’s. Known for soulful, structured, flavour-first food, Jeff has spent 40 years perfecting technique and ignoring trends.
Darling Glebe is personal. A return to his vision. A celebration of what endures.
