For American Express delicious. Month Out, Darling Glebe brings together the kitchens, flavours and late night habits that shaped Jeff Schroeter’s cooking across London, New York, Sydney and beyond, alongside our full à la carte menu throughout May.
It begins, naturally, with The Chef’s Martini. A revival of the early martini, before dryness became a dare. Balanced, savoury and quietly distinctive.
London arrives first in the form of crab tian with compressed watermelon and bonito soy. Precise, composed… then the watermelon wanders in and ruins the formality. London, if she loosened her collar.
Then New York. Oyster Rockefeller from the city’s golden age. An 1890s recipe, reborn. Rich, unapologetic and just a little decadent. Manhattan at midnight, when nobody’s pretending anymore.
Sydney follows with lemon marinated spatchcock, roasted and served with preserved lemon and thyme. Bright, generous and made for long autumn lunches that accidentally become dinner.
And finally, France. Lavender crème brûlée with a glassy caramel crack. Soft, fragrant and just structured enough to behave.
The menu is available throughout May for Friday lunch plus dinner Wednesday to Sunday.
