Whether you're toasting big wins or simply celebrating the fact you made it to June, we'll set the scene with indulgent food, flowing drinks and an atmosphere that escalates faster than anyone planned. 

Friday long lunches have been known to wander happily into the afternoon.

Both floors are yours. The Dybka Room, Ferrari Martini Lounge, Crystal Lounge, Adey Wine Cellar and the colonnade, all rolled into one very good reason to forget about budgets for the night.

From Friday lunches to full venue takeovers, you bring the team. We'll bring the crew, the flavour and just the right amount of theatre to make EOFY feel like a celebration, not a checkpoint.

Best paired with: Champagne that disappears too fast, speeches that run too long and an after-party planned since Q3.

The Adey Private Wine Cellar

 

They broke through sandstone to build a cellar.
Then just... kept going.

Because EOFY celebrations deserve a bit of drama.

This heritage rich, column lined space is where EOFY deals get sealed, targets get toasted and teams finally exhale after a long financial year.

With its own private bar, moody lighting and acoustics that make every EOFY toast sound far more important than it probably is, the Cellar is where end-of-year celebrations turn properly legendary.

Best paired with: foie gras, shared laughter and a very good reason to celebrate.

The Ferrari Martini Lounge

 

Where corporate gets polished, then slowly forgets how to behave.

Tucked into the front of the main dining room, this colonnaded space buzzes with EOFY energy: equal parts celebration, relief and "we absolutely earned this."

Perfect for Friday long lunches, EOFY dinners, client thank-yous and those "it's not a work event... but it definitely is" kind of afternoons that quietly become evenings. 

Best paired with: Chef's Martinis, scallop crudo and your most outrageous friend.

The Dybka Room

 

Darling Glebe's best kept secret.

Named for Australian glass artist Anne Dybka OAM, this intimate dining room is etched into the walls like a hidden jewel.

Surrounded by heritage brick, velvet and a little old world magic, it's perfect for EOFY Friday lunches, client dinners, leadership tables, private team celebrations or plotting next year's wins while this year's is still being toasted.

Best paired with: caviar service, aged Burgundy and no interruptions (except good news).

The Chef’s Table

 

Darling Glebe’s most coveted seat.
Part stage, part sanctuary.

Tucked beside the kitchen and nestled by the colonnade, this is EOFY's most exclusive front row seat, where the action is close, the pours are steady and no one has to chase a drink.

For intimate EOFY celebrations (or very important "we survived the year" meetings), it's all discretion, drama and just the right amount of indulgence.

Expect a curated experience led by Chef Jeff Schroeter, where instinct takes over and the only agenda is what's coming out of the kitchen next.

On Fridays and Saturdays, it's available for à la carte, table d'hôte or chef designed dégustations. All served with signature flair.

Best paired with: Oyster Rockefeller, sabayon (that's a silky French custard, darling) and the kind of knowing glance that says, "We absolutely earned this."

Menus change with the season and sometimes with the mood.

We write our menus the same way we build our rooms: with heart, history and heat.

You can request a custom menu, a set menu or leave it entirely up to Jeff. (We recommend that last one.)
